Blue and Purple potato

This variety has a dark purple skin. The flesh ranges in colour from dark purple, to lavender, to white. They keep their colour very well when cooked and have a subtle "nutty" flavour. The colour is best preserved when microwave cooked; however, they can also be prepared by steaming and baking. They are a colourful garnish to any green salad or potato salad.
