WHITESTRIPE lamb is an Australian second cross -breed lamb developed by breeding large-framed British rams like Border Leicester, Dorset or Suffolk with Merino ewes. This produces a stockier shorter lamb that has a large frame and consequently larger cuts of racks and legs that are demanded by fine dining chefs. As well, WHITESTRIPE lamb is raised in the southern part of Australia which has the highest rainfall and where reliable pastures or crops can grow to rapidly finish the lamb for market. These are ideal conditions for producing the prime quality lamb that is in such demand by better restaurants Internationally as they exhibit true table quality as opposed to lamb raised for the wool industry.
